  • 1 can enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 onion, chopped

Instructions

  1. Preheat oven to 350°F.
  2. In a skillet, brown the ground beef and onion.
  3. Add cumin, chili powder, and enchilada sauce; mix well.
  4. Layer corn tortillas, meat mixture, and cheese in a baking dish.
  5. Bake for 25 minutes or until cheese is bubbly.

Notes

  • For a spicier version, add jalapeños to the beef mixture.
  • Can substitute ground turkey for ground beef.
