30-Minute Seared Salmon with Lemon Orzo

A quick and healthy dinner option featuring seared salmon served with lemon orzo.

  • 4 fillets salmon
  • 1 cup orzo
  • 2 cups vegetable broth
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a saucepan, bring vegetable broth to a boil, then add the orzo and cook according to package instructions.
  2. While orzo cooks, season the salmon fillets with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat, then add the salmon skin-side down.
  4. Cook for about 4-5 minutes until the skin is crispy, then flip and cook for another 3-4 minutes.
  5. Add minced garlic, lemon zest, and lemon juice to the pan for the last minute of cooking.
  6. Once orzo is done, drain and toss with chopped parsley and any additional lemon juice to taste.
  7. Serve the salmon on a bed of lemon orzo.

Notes

  • For added flavor, marinate the salmon in lemon juice and herbs for 30 minutes before cooking.
  • Substitute quinoa for a gluten-free option.
